Chicken and Tortellini

Serves: 4-6 PeopleChicken and Tortellini

Ingredients:

  • 3 cloves of Garlic, minced
  • 1 medium onion, minced
  • 1 can of Stewed Tomatoes
  • 3 cups of Spinach
  • Chicken, 2 cans of shredded chicken or ½ rotisserie chicken
  • 8-16 ounces of Tortellini, uncooked
  • ¼ cup Vegetable Stock
  • 1 tbsp Olive Oil
  • Salt and Pepper, to taste
  • Red Pepper Flakes, optional, to taste

Directions:

  1. Cook tortellini in accordance to the package directions, then while that is cooking you can put together the sauce.
  2. In pan on medium heat sauté garlic and onion until translucent. Add tomatoes and cooked chicken to same pan. Once that is warm add spinach.
  3. Once tortellini is done cooking, strain and add to tomato sauce. Stir, allowing everything to be combined then enjoy!!
